Recipe ⬇️ Lemon Roasted Chicken Thighs
Ingredients:
6 chicken thighs cleaned and dried
8-10 small potatoes peeled and cut in halves
1 large white onion cut in half, then cut lengthwise
6 garlic cloves cut into slivers
Marinade:
Juice from 2 lemons
1/4 cup of olive oil
2 chicken bouillon cubes crushed
1 1/2 teaspoons oregano
1 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon salt
2 tablespoons butter
Directions: Preheat your oven to 350f. In a bowl combine lemon juice, olive oil, bouillon cubes, oregano, paprika, pepper, garlic powder, and salt. Mix well and set aside. In your baking dish add onions, garlic, and potatoes. Mix. Place chicken thighs on top, and pour over the marinade. Make sure everything is completely covered in the marinade. Top the chicken with pads of butter. Cover your baking dish with aluminum foil. Place in your preheated oven on the middle rack. Bake for 50 minutes. Remove from the oven, and take off the aluminum foil. Baste the chicken, and place back into the oven. Bake for another 45 minutes basting every 15 minutes until you have achieved the color you prefer. Serve with vermicelli rice and enjoy.
