ABC Soup

 

Equipment

  • Large heavy bottom pot

Ingredients

  • 450-500 gram Chicken drumsticks Or chicken with bones ( About 15 oz )
  • 1 Potato Cut big cubes
  • 1 Carrot Cut big cubes
  • 2 Tomatoes Cut wedges
  • 1 Onion Cut big cubes
  • 1 thumb Ginger Cut thin slices
  • 1 stick Celery Cut thin slices
  • 1 tsp Salt or salt to taste
  • ½ tsp Black pepper or to taste
  • 2-3 Spring onion Cut thin slices
  •  Cup Water Or add more water if needed

Instructions

  • First prepare the gather the ingredients by cutting the vegetables into large cubes and slices.
  • Fill the large pot with water and bring it to boil. Add the chicken pieces and blanch them in the boiling water just for 1-2minutes. Drain the water out and rinse the chicken with cold water.
  • Place the chicken drumsticks back in the pot, add carrot, potato, sweet corn, onion, celery, and ginger slices. Pour the water in and bring it to boil. ( Add enough water to cover the chicken and vegetables. ) Add salt to taste.
  • Then reduce the heat, close the lid and simmer with low-medium heat for about 30 minutes, then add the tomatoes. Continue cook for another 15 minutes, or until the chicken and vegetables are tender.
  • Add freshly ground black pepper. Make a taste test and adjust salt to taste.
  • Transfer to a serving bowl, sprinkle chopped spring onions. Enjoy!
